Salcombe Dairy has been making ice creams and sorbets since 1979,
and started making bean to bar chocolate in the factory in Island Street
in March 2018.
The organic Peruvian cacao beans are roasted to a particular specification,
then winnowed leaving just the cacao nibs.
The nibs are ground for 48 hours until they reach a particle size
which is less than 20 microns.
It is then conched for a further 3 hours, this process helps to release
the tannins and volatiles that are present in liquid chocolate.
After this, the chocolate is poured in to the Salcombe Yawl bar moulds.
It is then down to chocolatier, Kris to achieve the final shine and snap
for a well tempered bar of chocolate.
