Who are we? We're basically one big family of B's! The Boscawens and the Blys, with 250 miles between us. We are Nick and Ginny Boscawen, based here in Kent at our Salcombe Dairy south east office and we co-own Salcombe Dairy with Dan and Lucia Bly who are based in Salcombe, Devon, where the bean to bar chocolate, ice creams and sorbets are made. Together, we share the same passion for creating and supplying delicious food made from natural, sustainable ingredients that people love to eat.
How did it start? It was after a trip to Peru in 2017 when Dan and Lucia had headed off to visit cacao plantations that the whole idea of making chocolate in Salcombe changed from a dream into a reality. Up until then, the little factory in Island Street, Salcombe had been known and loved (since 1979) for producing delicious ice creams and sorbets and there we were, branching in to a new and exciting world of bean to bar chocolate production.
How is it made? It starts with organic Peruvian cacao beans which have been roasted to our own specification, then winnowed leaving the cacao nibs behind. The nibs are ground for about 48 hours, sometimes longer, then conched, which involves gently heating the chocolate to reduce the acidity and release the tannins. Finally, it’s down to Kris, our amazing chocolate maker who works to achieve the final shine and snap that we all love in a chocolate bar.
Why is it called The Bar? It was given the name after Lord Tennyson's poem, Crossing the Bar, which refers to the famous and treacherous sand bar that lies at the mouth of the Salcombe estuary.
Why are we selling single bars? It was thanks to Annalisa Barbieri featuring two flavours (Dark with Ginger and Dark Milk Rum and Raisin) in Weekend Guardian Observer Notes on Chocolate December 2020 that led us to setting up our online shop selling single bars of Salcombe Dairy chocolate. What about the packaging? The Bar packaging is compostable.
Allergens? All the range is gluten-free, soya free, egg-free nut-free and palm oil free. The Dark Chocolate flavours are dairy free, and suitable for a vegan diet. (The Milk and White Chocolate contain Milk, the only allergen in our chocolate).
